The variation between states is therefore in food business registration and food safety supervisor rules, not in occupational licensing.

What the job involves
Bakers and pastry chefs prepare, bake and finish bread, rolls, cakes, pastries and biscuits in commercial bakeries, patisseries, supermarkets and hospitality kitchens. It is a trade occupation normally entered through a three to four year Australian Apprenticeship, and it is not a licensed trade in any state or territory.
- Weigh, measure and mix ingredients to recipes and production sheets
- Prepare, ferment, prove and shape doughs and batters
- Operate and adjust ovens, provers, mixers, dividers, moulders and sheeters
- Bake products and judge doneness by colour, texture, aroma and internal temperature
- Prepare fillings, icings, glazes and creams, and decorate and finish cakes and pastries
- Apply food safety, allergen control and hygiene procedures under the Food Standards Code
- Clean and sanitise plant, benches and utensils, and carry out routine equipment maintenance
- Estimate production quantities, manage stock rotation and control wastage
