The Poultry Processing Award 2020 (MA000074) is the modern award that sets minimum pay and conditions for employers and employees in the poultry processing industry across Australia. It covers the slaughtering, processing, boning, packing and related preparation of poultry products, along with the plant operation, cold storage, maintenance and support roles on a processing site. This is a production and processing award, applying to factory and plant work rather than poultry farming or retail. Because processing plants often run extended hours and chilled production lines, the award carries shift, weekend and condition-related arrangements. How pay is structured

MA000074 sets minimum rates through classification levels based on the skills, training and responsibilities of the role, spanning entry-level processing and packing hands, slaughtering and boning roles, plant operators, and the leading hand and supervisory bands above them. You place each employee at the level matching the work they actually perform, then pay at least the minimum for that level; junior rates apply as a percentage of the adult rate for younger employees where relevant. Full-time staff work an average 38 ordinary hours a week, with part-time and casual engagement provided for, and shift work arranged to suit production. Minimum rates are reviewed every year in the Annual Wage Review and rise from the first full pay period on or after 1 July; the 2026 review added 4.75% to modern award minimums. Penalties & loadings

Because processing often runs across extended and multiple shifts, MA000074 layers shift loadings for afternoon and night work on top of the base rate, alongside Saturday and Sunday penalties, public holiday rates and overtime tiers. As a guide across awards, casual loading is commonly 25%, Saturday penalties commonly around 25% and Sunday around 50%, with public holiday work reaching up to 150%, and annual leave loading is 17.5%, but the figures this award actually sets, including how shift loadings combine with weekend penalties, must be confirmed at the Fair Work source. Treating all production hands as one rate

Processing, packing, slaughtering, boning and plant operation roles sit at different classification levels according to skill and responsibility, and leading hands attract a higher band or allowance. Paying everyone on the line at one entry rate, or not progressing people as they take on skilled or supervisory work, underpays them. Use the award's classification definitions to place each role correctly.

Missing shift loadings and condition allowances on a chilled line

Processing plants run afternoon and night shifts and chilled or cold production areas, and shift loadings plus any cold work allowance are easy to overlook with a flat hourly rate. These can stack with weekend penalties across a multi-shift roster. Map each shift and work area, then confirm the applicable loadings and allowances for MA000074 on the Fair Work source.

Charging staff for protective clothing instead of supplying it

Under this award protective clothing and equipment are supplied by the employer, not paid as an allowance, so deducting their cost from pay, or handing over a token clothing allowance and expecting staff to buy their own, breaches the award. Treat required PPE as an employer cost, supply it directly, and keep the cold work or chiller allowance separate as the payment for working chilled areas.
