The Seafood Processing Award 2020 (MA000068) is the modern award that sets minimum pay and conditions for employers and employees in the seafood processing industry across Australia. It covers the receiving, handling, processing, packing, freezing and storing of fish, shellfish and other seafood once it has been landed, including work in processing plants, fish receival depots and cold stores. If you run a seafood processing operation and employ staff who are not award-free, this is the instrument you generally apply. Catches arrive irregularly and product is perishable, so the award's penalty, overtime and shift rules matter a great deal in practice.

How pay is structured

MA000068 sets minimum rates through classification levels defined by the skills, training and responsibilities each role involves, with the detail in the award's classification schedule. You place each employee at the level matching the work they actually do - from basic receival and packing through to skilled filleting, machine operation and supervision - then pay at least that level's minimum rate. Full-time employees work an average of 38 ordinary hours a week, part-timers a lesser and reasonably predictable number, and casuals are paid by the hour. Junior employees and apprentices are paid on a percentage scale tied to the relevant adult rate. Minimum rates are reviewed each year in the Annual Wage Review and rise from the first full pay period on or after 1 July; the 2026 review added 4.75% to modern award minimums. Penalties & loadings

On top of the minimum rate, MA000068 layers weekend penalties, public holiday rates, shift loadings and overtime. As a general guide across awards, Saturday work commonly attracts around a 25% loading and Sunday around 50%, public holidays can reach up to 150%, and casuals receive a loading commonly set at 25% in place of paid leave - but this award sets its own figures, so confirm each. Because seafood is perishable and catches land at unpredictable times, overtime and call-back work are common and step up beyond ordinary hours. The award also provides industry allowances, which can include a cold work or freezer allowance for low-temperature work, a first aid allowance, and meal allowances for qualifying overtime. Misclassifying processing roles

Seafood processing spans simple packing, skilled filleting and shucking, machine operation and supervision, each at a different classification level. Defaulting all hands to the base level, or failing to lift an employee's level as they take on skilled or leading-hand work, causes underpayment. Use the award's classification definitions to place each role by the duties it actually involves.

Missing the cold work and overtime interaction

Much processing happens in chilled and freezer environments and at irregular hours when catches land. A cold work allowance can apply alongside overtime and weekend penalties, so paying only a flat rate for a late freezer shift understates what is owed. Confirm which allowances and penalties stack for each shift against the Fair Work source.

Confusing processing coverage with catching or storage awards

MA000068 covers processing landed seafood, not the catching of seafood at sea, which sits under fishing and seagoing instruments, and work can also fall under the Meat Industry, Manufacturing or Storage Services awards. Treating crew who catch at sea, or a standalone cold store, as seafood-processing employees applies the wrong award. Confirm coverage where work straddles catching, manufacturing or storage rather than assuming this instrument.

Treating irregular catch-driven labour as casual-by-default

When catches are unpredictable it is tempting to engage everyone casually and roster minimal shifts. Casuals still attract a loading, minimum engagement and full penalty entitlements, and regular, systematic work can give rise to part-time or permanent obligations. Engaging catch-driven labour without applying the correct award terms is a frequent compliance risk.
